The onion marmalade is based on a tried and tested recipe which incorporates white onions with a little Star anise; along the way in development a little extra kick was added through the addition of some cayenne pepper. The texture ensures the onions are soft and sweet but still retain their character and for the marmalade is not too sticky and condensed. Though its is great with any cheese, the onion marmalade works especially well with blues and hearty cheddars but also makes a particularly wonderful accompaniment to cured meats and pate.
