Sundried Tomato + Cheddar Soda Bread

The clever people over at Odlums have made baking soda bread so easy! With the soda mix all you need to ad is some milk. This recipe mixes it up a little by using some sundries tomatoes and cheese for something a little bit different. Delicious toasted with some Kerrygold butter. Yum!

Makes: 1 Loaf



  1. Add the soda mix into a large mixing bowl
  2. Add sufficient cold milk and mix to form a soft dough.
  3. Add the semi dried tomatoes, sea salt, thyme and cheddar.
  4. Knead the dough a little on a floured surface and turn the smooth side up.
  5. Cut a cross over the top and place in a floured 18cm/7" cake tin or place on a floured baking sheet.
  6. Bake for 40 minutes approximately. When baked the bread will have a hollow sound if tapped on the base.
  7. Cool on a wire tray. A tea towel wrapped over the bread at this stage helps to give a softer crust. Enjoy!
