Sausage + Sundried Tomato Pizza

There is nothing better than homemade pizzas, especially topped with delicious traditional Irish sausages! Enjoy!

Makes 4 Pizzas



  • 4 sausages, skin removed and cut into small chunks
  • 400g fior de latte / mozzarella
  • 250g semi-sundried tomatoes
  • 1 sprig rosemary, leaves plucked and chopped roughly

Tomato Sauce:

  • 200g tinned diced tomatoes
  • 2 garlic cloves, crushed
  • 1 tbsp olive oil
  • Sea salt and cracked black pepper

Pizza Base

  • 500g 00 strong bread flour
  • 7g dried yeast
  • 330ml luke warm water
  • 1 tsp golden sugar


  1. Mix the water, sugar & yeast in a jug and leave for a few minutes while you prepare the other ingredients.
  2. In a Bowl, sieve in your flour & salt and then make a well in the middle using a spoon. Gradually add your water mixture into the well and use a metal fork to add the flour from the sides and swirl it around in the liquid. Keep doing this until the dough comes together and you have a sticky dough ball.
  3. Next flour a work surface and knead the dough until its springy and not sticky any more. (You can keep adding flour to the work surface to do this). Now dust your mixing bowl with flour and put the dough into it. Sprinkle a little more flour on top of your dough ball, cover with a damp cloth and leave it in a warm room for an hour to rise.
  4. While the dough is put away, start making your sauce. Sautee your chopped garlic in olive oil on a medium heat until it turns golden. Add the tinned tomatoes and season.
  5. Leave this to simmer on a low heat for about 20 minutes mashing the tomatoes occasionally so you are left with a smooth sauce.
  6. When you come back to it the dough should have doubled in size. Now you have to knead it once more on a floured surface and you can start making your pizzas!
  7. Preheat the oven to 250 degrees.
  8. Now divide the dough into 4 balls and roll it out as thin as you can with a rolling pin.
  9. Sieve some flour on a flat baking tray and place the dough base on top.
  10. Cover this with sauce, toppings & cheese.
  11. Place in the oven for 15-20 mins until the base starts to get golden on the edges.
