Get cooking with Mileeven Irish Honey

We all love honey, be it in our tea, on toast or with our breakfast oats. But Irish honey is can add delicious zing and flavour to your lunch and dinner dishes.

Sweet Chilli Sauce


• 4 medium red chillies chopped finely (remove the seeds for less heat)
• 2 garlic cloves minced
• 150g Mileeven Pure Honey – Raw & Unblended 
• 200ml rice wine vinegar
• 100ml water
• 2 tsp fresh lime juice
• ½ teaspoon salt


1. Place the chillies, garlic, honey, rice wine vinegar, salt and water in a pot, bring it to a simmer and reduce the heat to low.
2. Cook for about 40 minutes, until the mixture is like a syrupy texture. Remove from the heat and add in the fresh lime juice and give it a stir.

Fish cakes


• 400g white fish (boned and skinned)
• 3 tsp red Thai curry paste
• 1 egg
• 1 medium potato cooked and mashed
• 1 tsp Mileeven Pure Honey
• 2 tsp fresh coriander (chopped)
• 1 tsp fresh ginger grated
• 2 tsp fresh lime juice
• 2 spring onion chopped finely
• ½ tsp salt


1. Place the fish, Thai curry paste, egg, honey, lime juice and salt into a food processor and blitz until the mixture is combined and smooth.
2. Place the mixture in a large bowl and add the potato, spring onion, coriander and ginger. Stir all ingredients well.
3. Wet your hands and divide the mixture into 16 equal pieces, roll them in to a ball and flatten so they resemble a patty shape about an inch in height.
4. Heat a pan, add some oil and cook the fishcakes on each side for about 2 minutes until golden brown. Do this in batches so you don’t crowd the pan which will ensure more even cooked fishcakes. Keep the cooked fishcakes in a warm oven till all the cooking is done.
5. Serve on a platter with the sweet chill sauce, and lime wedges to garnish.
