Vegetable Tagine with Erin's Soup
Looking for a meat free dinner? Our Vegetable Tagine is our go to winter warmer, you can't beat a big bowl after coming in from the cold weather. It's also ready in only 30 minutes so it's a winner all-round. Serve with rice, couscous or quinoa, whichever you'd prefer.
Preparation Time - 10 minutes
Cooking Time - 30 minutes
Servings - 4
  1. Fry the peppers, onion and garlic in a pot with the oil over a medium to high heat for about 5 minutes.
  2. Add the rest of the ingredients. Mix well and then leave to cook for 20 - 30 minutes; until the sweet potato is tender!
  3. Serve with couscous or quinoa, fresh herbs, and a dollop of plain yogurt if desired.
