Memories of warm Irish summer days spent playing sport in the garden or drives to beach for a refreshing paddle are never complete without a homemade treat to top the day off. Try these easy-to-make cupcakes full of that Cadbury Dairy Milk taste.

Cadbury Dairy Milk Cupcakes


Chocolate Cupcakes

100g Avonmore unsalted butter, softened

100g caster sugar

2 medium Golden Irish eggs

100g self-raising flour

25g Cocoa Powder

1 level teaspoon of baking powder

Chocolate Icing:

100g unsalted butter, softened

100g icing sugar

54g Cadbury Dairy Milk, melted (1 bar)

Topping

54g Cadbury Dairy Milk, chopped (1 bar)

Extra equipment you will need:

16 hole cupcake tin

Instructions:

1.Preheat the oven to Gas 5, 190 C and place 16 paper cases into a 16 hole cupcake tin.

2.In a bowl, beat together the butter and sugar until light and creamy, add the eggs one at a time and beat well after each addition. Fold in the sieved flour and cocoa powder. Divide the mixture between the cases. Bake in oven for 15 minutes, until well risen and golden brown. Cool.

3.Prepare the buttercream by beating together the butter and icing sugar until light and fluffy, then beat in the melted chocolate. Place into a piping bag with nozzle and pipe onto the top of the cakes.
